I’m not sure exactly what to call them except crazy delicious, I’m keeping an eye out for other local spots selling them so I can try different takes.

Are these small potatoes underneath?
Those are toasted corn kernels. There are giant steamed corn kernels as a side dish and then these smaller toasted kernels you’re asking about sprinkled as a base layer of the main plate.
It’s a different type of corn than I’m familiar with, extremely fluffy and bready, very dry.
