    Okay, I’ll be “that guy”: you can pry my gas range out of my cold, dead hands. Anyone who says “electric/inductive is just as good” does not know what the fuck they’re talking about. You cannot keep the heat applied to a pan your tossing with inductive, and I defy you to get a good wok hei on an inductive cooktop (spoiler: it’s categorically impossible). Not to mention, the visual feedback is actually super helpful in a lot of cases.

    Electric and inductive is fine for the vast majority of people, sure, but there are real and valid use cases where it simply does not have the same function as a gas range.

      No one is coming for your stove bro. You just won’t have as much infrastructure to support it. Its like horses and steam engines. They exist but society isn’t designed around them any more. You and others like you will be fine. At some point someone will develop a way to toss a wok on a inductive surface better than a gas burner, just give it time.
