The graphic kinda makes it look like this is all there is, but it’s really just the city center. The actual area is much larger, you could drive from there for 40 minutes and still be within city limits.
Edit: Fun fact, they just discovered the location of the original castle in 2014:

It took me a couple times to realize that the view area grew wider from the first image. I wish there was a higher resolution so I could see what survived from the first part!
I can answer that for you: Nothing has. The oldest buildings in Hamburg are from the 15th century with the lighthouse Neuwerk being the only exception (12th century and not pictured here). Most of the historic city was unfortunately destroyed in the Great fire of Hamburg and again during the Bombing of Hamburg during the Second World War.
Reminds me of my factorio playthrough with space exploration. Mainbase turned into city blocks over time with water being shaped to allow transit over time
